MADE WITH ORGANIC INGREDIENTS!
It all began with a passion for baking when I was just a little girl. From the time I was a pre-teen, I was surrounded by love in the kitchen. I remember my mom making dumplings, homemade bread, amazing pie crust and even homemade croissants early in the morning. Her claim to fame, however, is her cheesecake. Hands down, nobody does it better than my mom! My sister loved to whip up pancakes for breakfast and homemade tortillas for dinner. I swear there were hundreds of them by the time all was said and done. My grandma was the candy maker. She taught me how to use a candy thermometer and taught me how to make everything from hard candy to marshmallows. I learned so much from the amazing women in my life. When I was in my early twenties, my mom encouraged me to sign up for a recreational baking class at the Loretta Paganini Cooking School in Chesterland, Ohio. I excitedly took her advice and signed up for the six week course. We made a plethora of wonderful baked goods, but my all time favorite was the very first thing we made in the class: Biscotti. Loretta encouraged all of us in the class to open our own bakery. A very common phrase we heard in every class was, "and when you open your bakery..." and that stuck with me and encouraged me to keep my little home bakery business going. I started baking my biscotti for friends and family and lots of coworkers. I pursued a couple of local businesses who welcomed my biscotti with open arms. Over the years the retail locations where my biscotti is sold has changed a few times, but it's currently available at Sweets & Eats in Champion, Ohio. I am so grateful for everyone who has stood by me for all these years and look forward to exciting future opportunities to provide delicious baked goods for everyone!
It is so important to me to use the highest quality ingredients I can get. I have searched far and wide to get the best organic ingredients I can find to put in my biscotti. I use strictly organic flour, sugar and eggs. I am passionate about animal welfare, so my eggs always come from organically fed free roaming hens. Most of the add-ins are also organic. I will buy organic fruit, nuts and chocolate any chance I get.
Bekie's Biscotti is nothing like your typical store-bought biscotti! I learned from the best. Loretta Paganini taught me in her authentic Italian fashion that biscotti should not be "break your tooth hard" but rather, it should have a crunchy exterior and a somewhat softer interior. You should never have to dunk your biscotti in a hot beverage in order to eat it! Biscotti should be enjoyed without restrictions.
